Raspberry & White Chocolate Blondie Recipe (12-16 blondies)
Ingredients
- 115g unsalted butter (melted)
- 200g light brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 125g plain flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 100g white choclate chips
- 100-120g fresh raspberries
Method
- Preheat oven to 180 degrees (celcius)
- Line 8 x 8 inch baking tin with parchment paper
- In a bowl, whisk melted butter and brown sugar until smooth
- Add the egg and vanilla, mix until combined
- In another bowl, mix flour, baking, powder and salt
- Add the dry ingredients to the wet mixture until combined
- Stir in white chocolate chips and fresh raspberries
- Spread the batter into the tin
- Bake for 22-27 minutes until golden and the centre is just set
- let the blondies cool before serving
